1. The Notary
From the street, The Notary gives little indication of the experience awaiting behind its modest entrance. Once inside, the bustle of the city fades away; a combination of gentle music, bespoke lighting, and a signature fragrance immediately sets a tranquil tone. Rather than a sprawling luxury resort, The Notary is a converted 19th-century manor house featuring only nine suites, each defined by a distinct aesthetic. A stay here feels like stepping into a curated fantasy, complete with ornate interiors, secluded walled gardens, and a hidden canal-side terrace that feels like a secret reward <a House of Porters" design language. Expect an abundance of gilded mirrors, decorative accents, heavy drapery, and plush cushions. While the visual impact is stunning, the design occasionally prioritizes aesthetics over practicality. Each room includes standard high-end amenities: an emperor-size bed, premium bathrobes and slippers, Sonos audio systems, tablet-managed climate and lighting, and bathrooms equipped with rain showers and freestanding tubs.
European delicacies like French cheeses, charcuterie, and pastries. This elevated approach extends to dinner, where the Signature menu may include foie gras paired with mango and truffle, while seasonal offerings highlight dishes such as fish of the day and burrata with smoked duck. The standout feature, however, is the natural swimming pool that winds through the lawn, surrounded by lush greenery and a central fountain. Though it looks almost too decorative to use, it is fully functional. The unheated, plant-and-fish-filled water offers the sensation of diving into a private pond.
Time Out tip: Book in summer if you want to make the most of the garden and pool.
